Green Mojo Marinated Mushroom Tacos
- Juice of 1 orange
- Juice of 2 limes
- 1 serrano chile, stem removed
- 1-2 garlic cloves
- ½ cup cilantro sprigs
- 1/3 cup olive oil
- 2 tsp sugar
- 1 tsp salt
- 8 oz oyster mushrooms
- 8 corn tortillas
- ½ cup fresh cilantro
Pickled Red Onions
- ½ red onion, peeled and thinly slices
- 2 limes, juiced
- ½ tsp apple cider vinegar
- ½ tsp kosher salt
- ¼ tsp black pepper
Chipotle Mayo
- ¼ cup mayonnaise
- 1 garlic clove, crushed
- 2 tsp lime juice
- ½ tsp chipotle in adobo sauce
- 1/8 tsp salt
- 1/8 tsp black pepper
Mojo Marinated Mushrooms
Place the first 8 ingredients in a large blender and process until smooth. Place the oyster mushrooms in a large bowl and pour the marinade from the blender over the mushrooms. Set aside and let the mushrooms marinate for at least 30 minutes. Prepare the pickled red onions and chipotle mayo while the mushrooms are marinating.
Pickled Onions
Place all the ingredients in a large bowl or jar. Toss to combine and set aside for at least 30 minutes before serving.
Chipotle Mayo
Place all the ingredients in a small bowl and whisk until everything is mixed well. Set aside until ready to serve.
Finish and Build the Tacos
Preheat a grill or pan to medium-high heat. Remove the mushrooms from the marinade and sear for 5 minutes on each side or until lightly golden brown. Remove the mushrooms from the pan and slice into strips. Place the mushrooms on the corn tortillas, add a few pickled red onions, 1tbs. of chipotle mayo, and garnish with cilantro. Enjoy!
